About the exam

Most U.S. health departments require at least one Certified Food Protection Manager (CFPM) per food establishment, and the FDA Food Code expects the person in charge to show food-safety knowledge. The ServSafe Food Protection Manager exam from the National Restaurant Association is the most widely used ANAB-CFP accredited CFPM exam; others include Prometric, NRFSP and Above Training/StateFoodSafety, which cover the same Food Code content.

The ServSafe exam has 90 multiple-choice questions — 80 scored and 10 unscored pilot questions — and you need 70% (56 of 80) to pass. Every exam must be proctored: in person by a registered ServSafe proctor, at a Pearson VUE test center, or online with a remote proctor. The exam usually allows 2 hours.

Our practice follows the FDA Food Code — the 2022 edition current ServSafe materials reference, plus the September 2026 edition's updates (food defense and active managerial control duties for the person in charge, written employee-illness policies, and the jewelry rule allowing medically necessary devices). States adopt each edition on their own schedule, and core temperatures didn't change. Practice covers the Big 9 allergens (sesame added), the Big 6 pathogens and when to exclude or restrict staff, minimum cooking temperatures, two-stage cooling, holding, receiving and storage, HACCP's seven principles, sanitizer concentrations and pest control — with scenario questions, flashcards, case walkthroughs and illustrated guides.

The exam blueprint

ServSafe Manager (7th edition) content, which references the 2022 FDA Food Code; the FDA published the 2026 Food Code in September 2026 with no changes to core cooking, holding or cooling temperatures. ServSafe does not publish per-topic weights; our domain weights are estimates from the course chapters. — Foodborne illness and contamination, the safe food handler, the flow of food from purchasing to service, HACCP and food safety management, facilities and pests, and cleaning and sanitizing. 80questions2:00

The week before

  • Memorize the temperature numbers cold: 165, 155, 145, 135, 41 and the 2-hour/4-hour cooling rule.
  • Know the Big 9 allergens and the Big 6 pathogens — and which symptoms mean exclude vs restrict.
  • Review the seven HACCP principles in order.
  • Take one full timed practice exam and review every miss.

During the exam

  • Read for the key word: first, best, most important, NOT.
  • When two answers look right, pick the one that controls the hazard at its source.
  • Temperature questions: check whether they ask for the cooking, holding, receiving or cooling number.
  • Answer every question — unanswered questions count as wrong.
  • Flag tough questions and come back if time allows.

Keep your head

  • Ten questions don't count — a strange one may be a pilot question.
  • You need 56 of 80, not perfection.
  • Change an answer only when you spot a specific rule you misread.

After you test

  • You need 70% (56 of 80 scored questions) to pass the ServSafe Food Protection Manager exam.
  • ServSafe Manager certification is typically valid for 5 years; your state or local jurisdiction may require renewal sooner.
  • If you don't pass you may retest up to twice within 30 days; after a second failure wait 60 days. No more than four attempts in 12 months, and retests must be proctored.
  • Renew by passing the exam again before your certificate expires — there's no continuing-education alternative.
